From The Desk Of Aesop Rock: Raw Onions

Following a five-year hiatus, San Francisco-via-NYC hip-hop artist Aesop Rock recently returned with his first solo album since None Shall Pass. Released by the Rhymesayers label, Skelethon is the rapper’s effort to come to terms with the death of a close friend, as well as the deterioration of several friendships and close relationships. “Death has become commonplace in my life,” he says. “The past few years was an endless period of skeletons. But, hopefully, Skelethon will help put all of this behind me. Aesop: I am of the opinion that, in most cases, onions should be eaten in their raw form. Why? Because they are magnificent. Cooking an onion drains everything interesting about its taste and texture, and propels it into the world of mush. I feel like grilled onions are way more popular across the board, and this angers me.

The flavor of a large yellow onion, freshly peeled and sliced, is one of my favorite things in the world. I had a great aunt, Leona, who would sit and eat raw onions with me like apples as a kid. She would pour salt on the table cloth, dip it in and take a bite. What a genius.

While their may be some exceptions (the aforementioned patty melt, French onion soup, etc.), by in large the flavor and crunchiness of a raw onion in comparison to its cooked version is vastly superior. I love my omelets with cheese and raw onions. I take a fat slice of raw onion on my burgers. BLT? BLTO! You get where this is going. We should be eating onions raw because they are better that way. This is not a matter of opinion.
