From The Desk Of Little Hurricane’s Celeste “C.C.” Spina: French Onion Soup

Forgive the members of blues-rock duo Little Hurricane if they describe the past year as a whirlwind. Since their first practice in drummer Celeste “C.C.” Spina’s apartment in late 2009, they’ve gone from playing for crowds they could add up on one hand to earning the title of San Diego’s best new band and landing coveted spots at South By Southwest, Austin City Limits and Lollapalooza. Despite the fuss they’ve kicked up with their live shows and debut album, Homewrecker (Unknown Breakthrough), success hasn’t translated into overconfidence. Spina: French onion soup is one of my favorite foods to make on the road. It’s super easy and cheap, but also filling and delicious. Three onions, two cloves of garlic, with salt and pepper simmered for a few hours. Cover with beef stock and reduce. Top with some croutons and Swiss cheese and brown in a broiler or toaster oven,and you’re set!
