Best Of 2012, Guest Editors: Dan Deacon On Kimchi And Raw Almond Butter

As 2012 comes to an end, we are taking a look back at some of our favorite posts of the year by our guest editors.

Long before electronic wizard Dan Deacon released his commercial debut, 2007’s Spiderman Of The Rings, he’d gigged with a high-school ska band, earned a computer-music-composition degree from SUNY at Purchase, blew tuba for Langhorne Slim, shredded improv grindcore guitar with Rated R, started a chamber ensemble, co-founded Baltimore’s Wham City arts/music collective and released a series of experimental computer-music/sine-wave recordings. Deacon continues to pursue an eclectic musical course—his Carnegie Hall debut in March was part of a John Cage tribute—but his greatest successes have been in the electronic/dance scene. America (Domino), Deacon’s new album and the follow-up to 2009’s highly regarded Bromst, could cement his status as one of the country’s most adventurous and inspired electronic architects. Deacon: This has got to be the most slept-on food combination of the year. I love kimchi, but I have a hard time eating it in large quantities and not feeling really weird afterward. I was eating it a lot at a time I was 100{e5d2c082e45b5ce38ac2ea5f0bdedb3901cc97dfa4ea5e625fd79a7c2dc9f191} raw. The jar it came in listed several suggestions for how to eat it, including pairing it with raw almond butter. I thought it was a strange idea. It didn’t even suggest a ratio; it was like, “Just mix ’em up.” And, man, it really works! The almond butter gives the kimchi a meatiness, making it a heartier, more complete dish. The tastes merge into one. It’s like a brand new taste. Great road food! See you in the pit!
