From The Desk Of Midlake: Peanut Butter And Banana Sandwich (On Whole Wheat Flax Bread)

JesseSpoiler alert! The new Midlake record is not from the band that you grew to love with The Trials Of Van Occupanther. With each successive album, the members of Midlake transformed, foregrounding a different favorite section of their record collections. Now comes Antiphon (ATO), which announces itself with an opening title track that rocks harder and more insistently than anything in the group’s prior catalog. Midlake again sounds like a new band. And, this time it is: It’s Midlake’s first since the departure of principal singer/songwriter Tim Smith, its first with guitarist Eric Pulido stepping into those lead roles, its first with former touring members Jesse Chandler (keyboards, flute) and Joey McClellan (guitars) officially joining drummer Mackenzie Smith, multi-instrumentalist Paul Alexander and guitarist Eric Nichelson. Chandler: My staple go-to snack is the peanut butter and banana sandwich. The other guys have probably seen me eat hundreds of these over the years, but really it’s the one sandwich I can count on to quell my hunger. Every time I eat one I’m just not hungry anymore, but also not too full, which is great! I have a Sunbeam bread machine, and I use a recipe from a book called 300 Bread Machine Recipes by Heather Butt for whole wheat flax bread. It’s on page 181. It’s kind of a dense bread, but I love it, and flax is a great source for omega 3 and 6, especially if you’re a vegetarian. 😉 Then I slather both sides of bread with Krema peanut butter, which is great because the only ingredient is peanuts. Then slice a banana into quarters and voila, the perfect snack! I never get sick of it!
